The fact that I can make a healthier version excites me. I don't have to sacrifice my most enjoyable foods anymore. It's simple too when you know how. Paleo Banana Pancakes taste gorgeous!!! Your family will love you more for this healthy version.
Here's how you do it yourself...
1 portion (5-6 small pancakes);
1 banana, 2 eggs into a blender and blend until smooth. Put a tablespoon of coconut oil into a non stick pan and heat it up. Pour in 1/6 of the pancake mix and allow to spread. When bubbles start to appear on the pancake flip it over and cook for another 30 seconds. Then you're ready to serve.
