Our pizza was made using a sweet potato crust instead of your typical pizza base.
It was a first time for us. I love pizza. It's a special treat that doesn't come around often enough. Hence why I'm keen to get into making healthier versions. If only I could crack great taste and great nutrition. That's living in food heaven right?
Well so far through trial and error we have some cracking healthy meal recipes. We are gaining freedom and not excess body fat...BOOM. What a result!
Todays pizza tasted good but not like the pizza I love. This recipe was good but not at the standard we desire. The sweet potato lacked a doughie/crispy consistancy and the much missed tomato puree. Next time we will make these tweaks. It's well worth a shot!
Here's how you do it yourself...
1 medium serving
Slice 1 large sweet potato long ways into 5mm thick slices. Place on baking tray overlapping each slice so there's no gaps. Drizzle with coconut oil, sprinkle with salt and pepper. Put in oven at 200 degrees for 20 minutes. Take out of the oven and place your chosen toppings on top. Put back in the oven for 5-10 minutes until toppings cooked and serve.
